Who it suits / who should be cautious

  • People in the stable, pain-free phase of gallstones; also those with weak digestion, poor appetite or loose stools.
  • For children, halve the amounts. This is not for an acute, painful attack. If a stone blocks the bile duct or pain is severe, see a doctor.

Why these ingredients (the food-therapy logic)

  • Hyacinth bean (chao bian dou): Traditionally strengthens the spleen and dispels dampness.

Method

  1. Rinse and soak the beans, lotus seeds, Job’s tears, dates, tangerine peel and rice.
  2. Add 8 bowls of water and cook for about 2 hours down to 3–4 bowls of congee.
  3. Serve warm.

This congee also suits people with weak digestion, poor appetite or diarrhea. Halve the amounts for children. Remember the bigger lesson: eat breakfast, don’t fast too long, and go easy on fat and sugar.

Bro Niu: Freshly pressed apple juice or fresh pumpkin juice is traditionally said to help with gallstones — but it must be drunk within 5 minutes of pressing to have any effect; bottled supermarket juice doesn’t work.

  • Q (May): When pressing the apple juice, do I keep the skin on? Bro Niu: It’s best to peel the apple first, since the skin can carry wax and pesticide residue.
